This is a flavourful meal that also loaded up with fresh herbs and a tangy sauce. It will make a fabulous summer light meal!🥗

Ingredients
500g lean minced pork/turkey/chicken
1 medium chilli, deseeded and finely chopped
1 stalk lemon grass, finely chopped
1 shallot, finely chopped
1 garlic clove, minced
15g fresh coriander, roughly chopped
10g fresh Thai basil, roughly chopped
10g fresh mint, roughly chopped
1 tbsp cooking oil
Seasoning sauce
2 tbsp fish sauce
2 tbsp Thai Sweet Chilli sauce
juice from 2 limes
To serve
1 red onion, sliced/chopped
roasted peanut, roughly chopped
12 large gem-lettuce leaves
Instruction
Mix the ingredients for the seasoning sauce in a small bowl, set aside.
Heat a frying pan/wok over high heat with cooking oil.
Add shallots, lemon grass, chilli and garlic, sauté for 3mins until aromatic.
Add minced meat and stir fry for 10mins until the meat is fully cooking.
Pour in the seasoning sauce, sauté for 5-10mins until the sauce is reduced and the meat is nicely browned.
Off from heat, add coriander, basil and mint leaves to the wok and stir well.
Serve on lettuce leaves, garnish with onion slices and peanut.
