This seared salmon dish is flavour packed and really simple to make, the zesty character from the pan fried lemon slices makes this dish perfect for a summer lunchđYou can even top it up with some extra lemon zest if desired.

Ingredients you will need
2 fresh salmon fillets
1/2 lemon, thinly sliced
3-4 fresh rosemary sprigs
2 tsp olive oil
a pinch of salt and pepper, to season
lemon zest, to garnish (optional)
Instruction
Heat the olive oil in a large non-stick frying pan over medium-high.
Add rosemary to the pan and pan fry it for 2 mins, put the sprigs aside.
Add the salmon fillets, skin side down.
Cook the skin side for 4-5 minutes.
Add lemon slices to the pan.
Flip and cook the salmon for further 4-5 minutes and season with a pinch of salt and pepper.
Pan sear sides of the fillets for 1 min each.
Transfer to plate and garnish with lemon zest, serve warm.
