
Let’s talk about homemade pesto💖
There are so many ways to make pesto at home, I am going to show you my favourite pesto made with fresh kale, basil, parmesan, toasted pine nuts and a pinch of lemon zest.

Serve 2
Ingredients for pesto
100g kale leaves, chopped
30g basil leaves
1 clove of garlic, minced
50g parmesan, grated
20g roasted pine nuts
2 tbsp olive oil
1/4 tsp salt
1/8 tsp ground black pepper
half lemon zest, grated
To serve
150g spaghetti or any pasta, cooked
a pinch salt and ground black pepper, to season
cherry tomatoes, halved to serve (optional)
Equipment you will need
food processor
Instruction
Place all pesto ingredients in food processor, blend for 5 sec then pause. Repeat this for 15-20 times until you have a smooth pesto paste.
Cook the pasta in boiling water for 7 mins until al dente (or according to the packet cooking instruction).
Drain the pasta and reserve 1/4 cup of pasta cooking water.
Heat a large non-stick frying pan over medium-high.
Spoon the pesto to the pan and stir fry it for about 1 min.
Add the pasta and pasta cooking water to the pan and gently toss the pasta for about 1-2 mins until they are well combined.
Off from heat and transfer to plates, garnish with seasoning, lemon zest and roasted pine nuts.

This refreshing pasta makes perfect match with zesty pan seared lemon rosemary salmon fillets.
