After several years of cooking adventures in my apartment kitchens around the globe, fried rice is my always go-to meal-for-one recipe!đIt is so easy to make and you can always add in different ingredients to bring a little creativity to your dining table đ˝ď¸
Serve 1
Ingredients you will need
1 cup of cooked rice
1 small salmon fillet, cut in chunks (100g)
4 spring onions, finely chopped
1 egg
a pinch of salt and pepper
1 tsp soy sauce
corianders, to garnish (optional)
Instruction
Heat a frying pan/wok over medium-high and pan fry the salmon chunks until the surface is slightly browned.
Put aside the salmon and add the rice and egg, quickly mix the egg mixture and rice with your spatula, then keep stir frying for 3-4 mins.
Add the spring onions, soy sauce, salt and pepper .
Stir fry for another 1-2 mins until the rice is dry and well cooked.
Garnish with corianders, serve immediately.
