Double Chocolate Hazelnut Muffins


Make 6 muffins


Ingredients you will need

180g all-purpose flour

1 tsp baking powder

60g granulated sugar

50ml vegetable oil

150ml hazelnut milk/whole fat milk

1 large egg

2 tsp vanilla extract

40g coca powder

30g chocolate chips

30g chopped hazelnut nuts

Instruction

  1. Preheat the oven to 210C.

  2. Sift in flour, baking powder, cocoa powder, sugar and salt in a bowl

  3. In another large mixing bowl, combine the milk, egg, oil and vanilla extract, mix well.

  4. Add the dry ingredients to the wet mixture, stir to combine.

  5. Mix in chocolate chips and chopped hazelnuts in the mixture.

  6. Place 6 muffin liners in a muffin tin, spoon 2 tbsp of the batter to each muffin liner or until they are 3/4 full.

  7. Garnish each muffin with a sprinkle of chopped hazelnuts. (optional)

  8. Bake for 4 mins then turn down to 180C and bake for another 12-14 mins.

  9. Cool them on a wire rack for 10 mins and serve fresh :)


The reason to bake them in high temperatures first is to allow them to quickly develop the muffin top then continue to rise, this will result a lovely cracking top to the muffins😉
