These double chocolate banana muffins are moist and soft, with a lovely touch of peanut butter, they are perfect for breakfast and afternoon tea!
Make 12 muffins
Ingredients you will need
120g self-rising flour
1/2 tsp baking powder
25g unsweetened cocoa powder
1/2 tsp salt
2 medium ripe bananas(~180g), mashed
80g granulated brown sugar
6 tbsp oil
1 large egg
2 tsp vanilla extract
100g dark chocolate chucks/chips
50g dark chocolate chucks/chips, to garnish (optional)
12 tsp peanut butter
Instruction
Preheat the oven to 190C.
Sift in the flour, baking powder, cocoa powder, salt in a bowl
In another large mixing bowl, combine the mashed banana, sugar, egg, oil and vanilla extract, mix well.
Add the dry ingredients to the banana mixture, stir to combine but no need to over mix them.
Fold in the chocolate chunks/chips in the mixture.
Place 12 muffin liners in a muffin tin, spoon 1 tbsp of the batter to each muffin liner.
Add 1 tsp peanut butter in each muffin liner, then fill each liner to 3/4 full with the remaining batter.
Use a toothpick/dessert fork to give each batter a little stir.
Garnish each muffin with 1/2 tsp chocolate chucks/chips. (optional)
Bake for 20-22 mins.
Cool them on a wire rack and serve warm the best :)
I used peanut butter with chunky bites but this is just a personal preference ;) feel free to use your favourite nut butter.
