Pan fried potatoes have been underrated for ages! This golden potato bites seared with herby crusty edges will make the best side dish for any dinner🙌

Ingredients you will need
2 medium baking/starchy potatoes, cut into bites/small chunks
2 tbsp cooking oil
Seasoning coat for potatoes
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp rosemary
1/2 tsp garlic powder
1 tsp salt
1/2 tsp ground black pepper
1 tbsp flour
Instruction
Cook the potato chunks in boiling water in a saucepan for 5-7 mins until they become slightly soften but not yet mushy. (Depends on the cut-size and the potato type, you can think of al dente in pasta cooking as reference😂)
Drained the water and add all the seasonings in the saucepan, gently toss to coat the potato chunks.
Heat the cooking oil in a large frying pan over medium-high, add the lightly coated potato chunks in the pan. Shake off any flour lumps/excessive flour before adding.
Pan fry the chunks for 8-10 mins until the surface turns golden and crispy.
